Mushroom Fry


This recipe is from my MIL, and I just love it! Mushrooms are really healthy, though you need to be extra careful to use only fresh mushrooms. Until I tasted my MIL’s mushroom fry, I had only ambivalent feelings towards mushrooms. It used to be something I’d order from restaurants when I’m having vegetarian food. But now, mushroom fry features regularly in my house.



One main thing that you need to remember about this recipe is that, the quantity of the dish gets reduced quite a bit, when frying. But, its worth the taste, so I don’t generally mind J.

This recipe is really easy to prepare, and needs very less ingredients too.

Ingredients:
  • Button mushrooms – 2 packets
  • Garlic – 2 pods
  • Green chilly – 2 or 3
  • Curry leaves – 1 sprig
  • Turmeric powder – ½ tsp

Method:
  1. Wash and clean the mushrooms, drain off excess water.
  2. Slice the mushrooms. I usually cut the stem part first and slice the head part and stem part into 3-4 slices. 
    Note: The black colored gills inside the mushrooms can be ignored. It is edible, and the only thing is that, it gives a darker color to your dish. You can scrape the gills out too if you wish to. I don’t scrape the gills out and the dish turns out still great 😊.
  3. Add turmeric powder and salt to the mushroom, and mix well by hand. Leave it closed for 30 minutes. (Add only less salt as mushroom reduces a lot in size. If you add according to the amount of mushroom you see now, the dish will end up being very salty! A lesson I had learnt the hard way…)
  4. Crush garlic and chilly well.
  5. Heat pan until medium hot, and add coconut oil. Add only just enough oil to sauté the crushed garlic and chilly. (You can also use any other cooking oil, but coconut oil gives the authentic taste.)
  6. Add the crushed garlic and chilly, and sauté until well done. 
  7. Add curry leaves.
  8. Add the mushrooms (don’t add extra oil, mushroom leaves out water) and mix well. 
  9. Stir occasionally until mushroom becomes darker in color and reduces in size.

           Enjoy the tasty mushroom fry with Roti or Rice 😊.
